Liberty Middle School was one of many schools nationwide participating in the United States Department of Agriculture (USDA) “Recipes for Healthy Kids” competition. Orange County Public Schools held their event last year at Edgewater High School with many schools participating.
Each school’s food service manager was paired with a chef from a local restaurant to create a healthy, kid-friendly recipe with student input. Liberty Middle School’s food service manager Sharon Springer (shown left with black hat) and local chef Ed Colleran (shown left with white hat) created the roasted fish crispy slaw wrap. Students then worked to refine the recipe.
Tweaks were made. Tests were conducted and a runner-up in the national contest emerged. This recipe includes bok choy, green and red cabbage, tilapia, and chili-lime seasoning as some of the ingredients. It is now featured on OCPS school menus and students look forward to it.
The recipe will be featured in a new cookbook soon to be released.
